Purple Cow

Purple Cow Directions:

If you prefer, you could replace the milk with 1/2 cup yogurt.

  1. Place all the ingredients into the blender container; cover and blend on high until smooth and frothy with no large pieces of ice remaining. Add more milk if needed to reach desired consistency. Pour into two glasses and serve immediately.

I have been looking through my kids’ cookbooks lately, trying to find some healthy, family friendly recipes that I can prepare with my daughter.

One recipe that keeps showing up is for a drink comically referred to as Purple Cow. I am not sure who first came up with this drink, but it’s a favorite with folks of all ages. In its simplest form, a purple cow is grape juice and milk; however, each cookbook has a slightly different version.

Here is our take on the Purple Cow. It does turn out very purple thanks to the grape juice and blueberries, and actually tastes great. My daughter loved it, of course being bright purple didn’t hurt either.

It’s fast, easy and delicious. And chances are your kids will love it. What more could you ask for? We think it’s a great treat for a warm summer day, but it could also be a breakfast smoothie.
