Wow, can you believe April is almost over? I guess Spring is in full swing and time to get cooking all those great spring vegetables that are in season now.

I have a pile of cookbooks checked out from the library and a stack of food magazines to go through, so I am planning on trying a few new recipes this week. I want to make it simple though, so I am incorporating recipes that have similar ingredients or can use leftover meat. I find this saves me a lot of time and effort come 5 o’clock.

We continue to go meatless one day a week, which has been far easier than anticipated. If you haven’t given “Meatless Monday” a try I really encourage you to do so. It’s a great way to incorporate more vegetables and healthy grains into your diet.

I hope you have a wonderful week and take the time to make yourself some really delicious gluten-free meals!

Monday:

Pasta with Broccoli Rabe, Oregano, and Lemon

Tuesday:

Pineapple Pork with Quinoa

Wednesday:

Potato Salad (minus the bacon) & Grilled Chicken

Thursday:

Pork Fried Rice (with leftover pork)

Friday:

Black Bean & Rice Tacos (new salsa recipe)

 

Saturday:

Slow Cooker Pot Roast with red potatoes.

Sunday:

Roast Beef Panini (new bread recipe)
