In December I read about Meatless Monday. Here is an overview, taken directly from their website:
Meatless Monday is a non-profit initiative of The Monday Campaigns, in association with the Johns Hopkins’ Bloomberg School of Public Health. We provide the information and recipes you need to start each week with healthy, environmentally friendly meat-free alternatives. Our goal is to help you reduce your meat consumption by 15% in order to improve your personal health and the health of the planet.
Presidents Wilson, Truman and Roosevelt galvanized the nation with voluntary meatless days during both world wars. Our intention is to revitalize this American tradition. We’re spearheading a broad-based, grassroots movement that spans all borders and demographic groups. By cutting out meat once a week, we can improve our health, reduce our carbon footprint and lead the world in the race to reduce climate change.
When I suggested to my family that we participate in Meatless Monday, they were less than enthused, especially my meat-loving husband. He worried the food would be boring and he would be hungry with no meat. I tried to explain it would be fun and good for us; they weren’t exactly buying it.
Well, we started January planing one meatless day a week and guess what? It’s worked out great! The dishes are flavorful and fresh and are some of the easiest dishes to get on the table on a busy weeknight.
And the biggest surprise of all? My husband enjoys our Meatless Mondays so much, he recently asked me if we could plan on going meatless two days a week from now on. So, even if your family goes kicking and screaming into the whole meatless idea, they might actually enjoy it!
I really encourage my readers to give going meatless one day a week a try. There are so many great-tasting, meatless main dishes. And truthfully, they tend to be healthier and easier to prepare than typical meat entrees, and they can be just as filling!
