The other day I posted a recipe for Chocolate Graham Crackers. We’ll we had the brilliant idea to cut the dough into circles, using a drinking glass for lack of better cutter, and baked them as usual. Then we sandwiched ice cream between two cookies and voila…gluten-free ice cream sandwiches. Super easy and super delicious.
Just to make them a bit more fabulous, we rolled them in mini-chocolate chips. This step is optional, but definitely a hit with the kids.
And as a side note, since the Chocolate Graham Cracker dough happens to be egg-free, it would be a great addition to ice cream; think gluten-free chocolate cookie dough ice cream. Yummy!
